Let sit for <strong>5&#8211;10 minutes</strong> until foamy.</p></li><li><p><strong>Make the dough</strong> In a bowl combine flour, spices and salt. Add the yeast mixture, melted butter, egg and vanilla. Mix into a <strong>soft dough</strong>.</p></li><li><p><strong>Knead</strong> Knead for <strong>8&#8211;10 minutes</strong> until smooth and elastic.</p></li><li><p><strong>Add the fruit</strong> Knead in the sultanas (and orange zest if using).</p></li><li><p><strong>First rise</strong> Cover and leave somewhere warm for <strong>1&#8211;1&#189; hours</strong>, or until doubled.</p></li><li><p><strong>Shape the buns</strong> Divide into <strong>12 equal pieces</strong>, roll into balls and place in a lined baking dish close together. I measure my total dough the divide it by 12.</p></li><li><p><strong>Second rise</strong> Cover and rise <strong>30&#8211;40 minutes</strong> until puffy.</p></li><li><p><strong>Pipe the crosses</strong> Mix flour and water into a thick paste and pipe crosses over the buns.</p></li><li><p><strong>Bake</strong> Bake at <strong>180&#176;C for 20&#8211;22 minutes</strong> until golden.</p></li><li><p><strong>Glaze</strong> Mix honey or jam with warm water and brush over the buns while hot.</p></li></ol><div><hr></div><p><strong>Stacey&#8217;s tip</strong> Bake them close together so they pull apart soft and fluffy. So we&#8217;re celebrating with a <em>healthier take on a classic key lime slice</em>. It&#8217;s creamy, zesty, lightly sweetened, and made with simple, nourishing ingredients &#8212; the perfect slice for summer afternoons or an easy fridge treat.</p><div><hr></div><h3><strong>Ingredients</strong></h3><h4><strong>Base</strong></h4><ul><li><p>1&#189; cups almond meal</p></li><li><p>2 tbsp butter, melted</p></li><li><p>2 tbsp maple syrup</p></li><li><p>Pinch of salt</p></li></ul><h4><strong>Creamy Lime Filling</strong></h4><ul><li><p>250 g full-fat cream cheese, softened</p></li><li><p>&#8531; cup thick Greek yogurt</p></li><li><p>&#188; cup maple syrup (or honey)</p></li><li><p>Zest of 2 limes</p></li><li><p>&#189; cup fresh lime juice (key limes or regular)</p></li><li><p>2 eggs</p></li></ul><div><hr></div><h3><strong>Method</strong></h3><h4><strong>Base</strong></h4><ol><li><p>Preheat oven to <strong>180&#176;C</strong> and line a slice tin.</p></li><li><p>Mix almond meal, melted butter, maple syrup and salt until well combined.</p></li><li><p>Press mixture <strong>very firmly</strong> into the base of the tin.</p></li><li><p>Bake for <strong>10 minutes</strong> &#8212; this step helps the slice hold its structure.</p></li><li><p>Remove from oven and allow to cool completely.</p></li></ol><h4><strong>Filling</strong></h4><ol><li><p>Reduce oven temperature to <strong>160&#176;C</strong>.</p></li><li><p>Beat cream cheese until completely smooth.</p></li><li><p>Mix in Greek yogurt, maple syrup, lime zest and lime juice.</p></li><li><p>Beat in eggs <strong>last</strong>, mixing just until combined (don&#8217;t over-mix).</p></li><li><p>Pour filling over the cooled base.</p></li></ol><h4><strong>Bake</strong></h4><ul><li><p>Bake for <strong>25&#8211;30 minutes</strong>, until the centre is just set with a slight wobble.</p></li><li><p>Cool at room temperature, then refrigerate for <strong>at least 4 hours</strong> (overnight is best).</p></li></ul><p>Slice, serve, and enjoy &#128155;
